Ingredients for organic gazpacho (for 2 people)
250 g stale white bread
4–5 large ripe tomatoes
1 small cucumber - peeled and coarsely chopped
1 green pepper - deseeded, coarsely chopped
2 garlic cloves – peeled and chopped
Manju sea salt
Freshly ground black pepper
To taste: Fresh herbs, red pepper, spring onions
1. Cut the bread into slices, remove the crust and soak in 100 ml of water. Pierce the tomatoes at the top with a small knife, place in a dish and pour over boiling water. Pour off the water after 30 seconds. Allow the tomatoes to cool down for a short time, then peel.
2. Place the tomatoes in a dish along with the prepared vegetables and the garlic. Spread the bread over the top, add 2 tbsp of olive oil and 1 dash of sherry vinegar and then mix the ingredients until smooth in a hand mixer or food processor. Season with salt and pepper, add a generous dash of water, mix again with the mixer and then season again. Cover the gazpacho with cling film and place in the fridge.
3. Pour the well cooled gazpacho into glasses or bowls, sprinkle with olive oil and garnish as required - for example with herbs, finely chopped peppers or chopped onions. Delicious, refreshing and really simple!
